This Mediterranean Pearl Couscous with Roasted Tomatoes & Basil is a light, flavorful dish inspired by Mediterranean simplicity. It combines roasted tomatoes, fluffy couscous, and fresh herbs for a nourishing meal that's both healthy and delicious — perfect as a side or a satisfying light main.

Ingredients

  • 1 cup pearl couscous (or regular couscous)

  • 1 ½ cups vegetable broth or water

  • 1 ½ cups cherry or grape tomatoes, halved

  • 1 tbsp olive oil

  • 1 clove garlic, minced

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • ¼ tsp dried oregano (optional)

  • 1 tbsp fresh lemon juice

  • 2 tbsp fresh parsley, chopped

  • A handful of fresh basil leaves, for garnish

Preparation

  • Preheat oven to 400°F (200°C).Line a baking tray with parchment paper.

  • Roast the tomatoes:Toss cherry tomatoes with olive oil, garlic, salt, pepper, and oregano.Spread evenly on the tray and roast for 15–20 minutes, until softened and slightly caramelized.

  • Cook the couscous:In a saucepan, bring vegetable broth to a boil.Add couscous, reduce heat, cover, and simmer for about 8–10 minutes (or according to package directions) until tender.Fluff with a fork.

  • Combine:In a large bowl, mix the warm couscous with roasted tomatoes, lemon juice, and chopped parsley. Adjust seasoning with more salt or pepper if needed.

  • Garnish and serve:Transfer to a serving dish, top with fresh basil leaves, and drizzle lightly with extra virgin olive oil.
